If you ask anyone in Romania what dish best represents home, family celebrations, and comfort food,
These tender cabbage rolls are filled with seasoned ground beef, rice, and aromatic herbs, then slow-cooked over a bed of sour cabbage and smoked beef bacon. They are incredibly rich, satisfying, and even better the next day after the flavors have had time to meld together!
Prep & Cooking Details
Ingredients
For the Beef Filling & Rolls:
1 large head of sour cabbage (sauerkraut whole head) (If using fresh green cabbage, blanch whole leaves in salted boiling water with 2 tbsp vinegar until pliable)
500g ground beef (choose medium ground, approx. 15–20% fat for juicy rolls)
100g white short-grain rice, rinsed and drained
2 medium yellow onions, finely diced
2 tbsp vegetable or olive oil
2 tbsp tomato paste
1 tbsp sweet paprika
1 tbsp dried savory (cimbru) or dried thyme
Salt and freshly cracked black pepper, to taste
For the Pot & Simmering:
150g halal smoked beef bacon or smoked beef brisket, chopped (adds that essential smoky depth traditionally provided by pork)
1 cup tomato puree or passata
1 cup shredded sour cabbage (use leftover inner leaves or trim)
2–3 bay leaves
Water or beef stock, enough to submerge the rolls
Step-by-Step Instructions
1.Prepare the Cabbage Leaves:Carefully separate the leaves from the sour cabbage head. Trim off any thick center veins from each leaf so they bend easily without cracking. Cut large leaves in half; keep smaller leaves whole. Shred any damaged leaves or the inner core to line the pot later.
2.Sautรฉ the Onions and Rice:Heat 2 tbsp of oil in a skillet over medium heat. Add the finely diced onions and cook for 5 minutes until soft and translucent. Add the rinsed rice, sweet paprika, and tomato paste. Stir continuously for 2 minutes to toast the rice slightly, then remove from heat and allow to cool.
3.Mix the All-Beef Filling:In a large mixing bowl, combine the ground beef, sautรฉed onion and rice mixture, dried savory (or thyme), salt, and black pepper. Mix thoroughly using your hands until everything is evenly integrated.
4.Roll the Sarmale:Place a cabbage leaf flat on your palm or work surface. Place about 1 to 1.5 tablespoons of beef mixture near the stem end. Roll the leaf over the meat once, fold in both side edges to seal, and continue rolling tightly to form a neat cylinder. Tuck the ends gently with your finger if needed.
5.Layer the Pot with Smoked Beef:In a heavy Dutch oven or clay pot, spread a thick layer of shredded cabbage at the bottom. Arrange a layer of chopped smoked beef bacon on top. Place the rolled sarmale tightly side-by-side in concentric circles. Repeat with remaining rolls, adding smoked beef pieces between layers. Top the final layer with more shredded cabbage and bay leaves.
6.Slow Simmer to Perfection:Pour the tomato passata over the rolls, followed by enough beef stock or water to completely submerge the top layer. Cover with a lid and bring to a boil on the stove. Reduce heat to low and simmer gently for 2 to 2.5 hours (or bake covered in the oven at 180°C / 350°F). The rolls are done when the cabbage is melt-in-your-mouth soft and the beef is completely tender.
